Simple Blueberry-Lemon Upside-Down Cake Recipe – We love a good upside-down cake, and this our favorite one yet. The blueberries get super-juicy as they bake—it's the perfect representation of spring!

- 1/2 cup sugar
- 2 cups miniature marshmallows
- 1 package yellow cake mix ((regular size))
- 1/2 teaspoon grated lemon zest
- Whipped topping
