Description

  • 2 cups shredded, cooked chicken
  • 1 cup barbecue sauce
  • 2 tablespoons honey
  • 1 teaspoon hot sauce, or more if you like extra heat
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • ½ cup thinly sliced red onion
  • ½ cup diced bell pepper (any color works)
  • ¼ cup freshly chopped cilantro
  • Salt and black pepper, to taste
  • Sour cream and guacamole, for serving (optional)


Instructions

  1. In a mixing bowl, toss the shredded chicken with the barbecue sauce, honey, and hot sauce. Stir until every piece of chicken is evenly coated in the sweet and spicy sauce. Set aside.
  2. Warm the olive oil in a skillet over medium heat. Add the red onion and bell pepper, cooking until softened and lightly caramelized, about 4–5 minutes. Season with salt and pepper, then remove from the pan and set aside.
  3. Place a tortilla on a flat surface. Sprinkle a generous layer of cheddar and mozzarella over one half of the tortilla. Spoon the BBQ chicken mixture evenly over the cheese, then top with the sautéed vegetables and a sprinkle of fresh cilantro.
  4. Fold the tortilla in half to cover the filling.
  5. Heat a clean skillet or griddle over medium heat. Add the folded tortilla and cook until the bottom is crisp and golden, about 2–3 minutes. Flip and cook the other side until the cheese is fully melted and the tortilla is nicely browned.
  6. Transfer the quesadilla to a cutting board and let it rest briefly before slicing into wedges.
  7. Repeat with the remaining tortillas and filling.
  8. Serve warm with sour cream and guacamole on the side, if desired.

  • Use a spicy barbecue sauce if you want an extra punch of heat.
