Rotel Dip

With just three main ingredients, you can whip up this irresistible Rotel cheese dip! This dip is a breeze to make for any party and saves you from dealing with a mountain of dirty dishes since it all cooks in one pot. It’s the ideal dip to prepare and keep warm in a slow cooker for those long events (hello, Super Bowl Sunday!).

Ingredients
  

  • 1 pound 85% lean ground beef or pork sausage
  • 1 can 10 ounces Rotel tomatoes
  • 1 package 16 ounces Velveeta cheese, cubed
  • 1/2 teaspoon chili powder optional
  • Chopped fresh cilantro and tortilla chips for serving

Method
 

  1. In a medium pot or saucepan over medium-high heat, cook the beef, stirring often, until it’s browned, about 5 minutes. Drain off the fat, leaving the meat in the pot.
  2. Reduce the heat to medium and add the tomatoes and cheese. Cook, stirring frequently, until the cheese is melted and everything is well combined, about 5 minutes.
  3. Remove the pot from the heat and stir in the chili powder if you’re using it.
  4. Serve the dip warm in the skillet or transfer it to a serving bowl. Sprinkle some cilantro on top if you like and serve with tortilla chips on the side. Enjoy the cheesy goodness!
